Last night I decided to try my hand at some of this fancy shmancy cooking that Snack Monkey has been doing lately so I pulled out the leftover dough he made last week, floured up the counter and rolled the dough out into two calzones. In Snack Monkey's I did ricotta, white sauce, pepperoni, chicken (which I cooked in the oven with a tsp of EVOO, 2 Tbsps rice wine vinegar, and generous sprinkles of sage, salt, and pepper at 350 degrees for 30 minutes in a glass bread pan), broccoli, mushrooms, a few slices of white american cheese, and garlic powder. The disaster with this one is that I made the mistake of putting all the fillings in while the dough was still on the counter so then, when it came time to move it to the pan, I realized it was a doughy, floppy, mess way too big for any of the spatula's that I own. After messing with it for awhile and trying, unsuccessfully to slide it onto a plate for transport I finally just picked the whole thing up, shape be damned, and dropped it on the pizza stone. The top of it was stretched so thin in places that it was almost transparent and I was really worried that it was going to suck but I brushed some egg white over it, popped it in the oven and kept a close eye on it.
With mine I put the ricotta and home made pizza sauce on it then moved it to a floured cookie sheet before adding the filling. I used chicken, mushrooms, broccoli, and garbanzo beans. I forgot to the put the garlic powder, salt and pepper on the inside like I did with Snack Monkey's so I sprinkled some on the top after I put the egg white over it. Snack Monkey's calzone actually came out pretty good, it didn't look pretty by any means but the top was golden brown and the bottom was cooked perfectly and he said it tasted great but made waaaaay to much for him to eat in one sitting. Mine, on the other hand, burned black and hard as a rock on the top and the entire bottom stuck to the cookie sheet so that the thing literally snapped in two (top and bottom) when we tried to put it on my plate. I ended up scraping all the guts out of mine, putting some Frank's red hot on them and throwing the entire crust, top and bottom, in the trash. I didn't take pictures because it was just too humiliating.

p.s. I really wanted to re-color the old image and then lay the new image over top of it and make it 50% transparent so I can see the shadow of what I used to be behind the image of what I am now but my freakin photo editing software is a pile of cheap crap! So, if any of you have good photo editing software and would like to make me a little present *cute hopeful grin* I would be EXTREMELY grateful! :)
p.s.s. yes, I got chocolate dipped fruit from my sweetie for Valentines day. How cool is he that he thought to get fruit instead of just regular old dipped chocolates? I looked up the calories online though and they are 30 calories per piece. HOW AWESOME IS THAT?!

ReplyDeleteSpunky: It was pretty awesome. I've had relationships where the guy barely recognized my existence on holidays or where they didn't know me well enough to pick out a gift so I would get the usual "flower and candy". I'm not a big enough snob to turn my nose at flowers and candy but when you're a big-time tom boy like me there is something extra special in knowing that Snack Monkey really thought about the gift he gave me and knew that the gift matched my personality and goals. Sure they're dipped in chocolate but that's just his way of wanting to pamper and spoil me and I think it's precious.

If you don't show this weekend I'm taking X's Christmas present and giving it to the cat and believe me ... the cat has had his eye on it since the day we brought it home but I've gone to great lengths to keep him away from it. Thanks for the congrats by the way, I know being sick and having a sick baby and bad weather sucks and they're all good reasons to stay home and take care of yourself, I know that. I'm not really mad but I will be really sad if you can't come this weekend. I've been taking my vitamins every day and if I do get a little sick from you so what - it will be totally worth it to see X-man.
Belle: sure there is, here and then why not right? :) Even before the diet I wasn't ever a big drinker but I have been missing the pleasure of a glass of well-paired wine with certain meals. It was nice to sip a fruity Reisling with supper last night and I still counted the calories in it. ;)
